Ingredients
  

For the crust
  • 1 cup unsalted butter Softened for easy mixing
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
For the filling
  • 1 cup brown sugar
  • 1 cup corn syrup
  • 4 large eggs
  • 2 cups pecans, chopped Use fresh, lightly toasted for best flavor
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a medium bowl, cream together the butter and granulated sugar until smooth and fluffy.
  3. Gradually mix in the flour and salt until you have a crumbly texture. Don’t overwork it.
  4. Press this mixture into the bottom of the prepared baking pan evenly and bake for 15 minutes.
Filling
  1. In a separate bowl, whisk together the brown sugar, corn syrup, eggs, vanilla extract, and chopped pecans until well combined.
  2. Pour the pecan mixture over the baked crust, spreading it evenly.
  3. Bake for an additional 30-35 minutes or until the filling is set and slightly bubbly.
  4. Allow to cool completely in the pan before cutting into bars.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. These bars freeze well for up to 3 months.
