  • 2 tablespoons peanut butter Creamy or crunchy
  • 2 tablespoons soy sauce Or tamari for gluten-free
  • 1 tablespoon maple syrup Can be adjusted for sweetness
  • 1 tablespoon rice vinegar For tanginess
  • 1 tablespoon sesame oil Adds flavor
Main Ingredients
  • 1 block firm tofu, pressed and cubed Drain well before cubing
  • 2 cups cooked rice Any variety of your choice
  • 1 cup mixed vegetables e.g., bell peppers, carrots, broccoli
  • to taste none Chopped scallions and crushed peanuts For garnish

Preparation
  1. In a bowl, mix peanut butter, soy sauce, maple syrup, rice vinegar, and sesame oil to create a sauce.
Cooking
  1. Heat a non-stick pan over medium heat, add cubed tofu, and cook until golden brown on all sides.
  2. Add mixed vegetables to the pan and stir-fry until tender.
  3. Pour the sauce over the tofu and vegetables, stirring to combine.
  4. Serve the tofu and vegetable mixture over cooked rice.
  5. Garnish with chopped scallions and crushed peanuts.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently to maintain tofu's texture.
