  • 1 cup peanut butter Use smooth or chunky as preferred.
  • 1 cup sugar
  • 1 large egg Can be substituted with a flaxseed or chia seed egg for a vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt. Mix until everything is well blended and smooth.
  3. Roll the dough into small balls, about one tablespoon in size, and place them on a baking sheet lined with parchment paper.
  4. Using a fork, gently flatten each ball and create a crisscross pattern on top.
Baking
  1. Bake in the preheated oven for 10-12 minutes, or until the edges turn a lovely shade of golden brown.
  2. Allow the cookies to cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely.

Notes

These cookies pair beautifully with cold milk, and can be transformed into ice cream sandwiches or crumbled over yogurt. Store in an airtight container for 5-7 days, or freeze for up to three months.
