Preparation
- Preheat your oven to 375°F (190°C). Place the butter in a 9x13 inch baking dish and put it in the oven to melt while the oven heats up.
- In a medium saucepan, combine the sliced peaches, 1/2 cup of sugar, water, and lemon juice. Bring the mixture to a gentle boil over medium heat. Let it simmer for about 5 minutes until the peaches soften slightly. Stir in the cinnamon and remove from heat.
Making the Batter
- In a large mixing bowl, whisk together the flour, the remaining 1/2 cup of sugar, baking powder, and salt.
- Pour the milk and vanilla extract into the dry ingredients. Whisk gently until the batter is smooth. Do not overmix.
Combining Layers
- Carefully remove the baking dish with the melted butter from the oven. Pour the batter directly over the melted butter. Do not stir it.
- Spoon the peaches and their syrup evenly over the batter. Again, do not stir the layers.
Baking
- Place the dish back in the oven. Bake for 40 to 45 minutes. The top should be golden brown and the edges should be crispy.
- Remove from the oven and let it cool for at least 10 minutes before serving.
Notes
Best served warm with vanilla ice cream or whipped cream. Store leftovers covered at room temperature for up to 24 hours or in the refrigerator for up to 4 days.
