- Begin by boiling water in a large pot. Add the rotini pasta and cook according to the package instructions until al dente.
- Drain and rinse under cold water to cool the pasta.
- In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, feta cheese, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
- Pour this dressing over the pasta salad and toss gently until everything is well coated.
- Taste and adjust the seasoning if necessary.
- Chill in the refrigerator for at least 15 minutes before serving to let the flavors meld together.
