Ingredients
  

Pasta and Vegetables
  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1 piece bell pepper, chopped
  • 1/2 medium red onion, finely chopped
  • 1 cup black olives, sliced
  • 1/2 cup feta cheese, crumbled or a suitable substitute
  • 1/4 cup fresh parsley, chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1-2 cloves garlic, minced
  • to taste Salt and pepper

Method
 

Preparation
  1. Begin by boiling water in a large pot. Add the rotini pasta and cook according to the package instructions until al dente.
  2. Drain and rinse under cold water to cool the pasta.
  3. In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, feta cheese, and parsley.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper.
  5. Pour this dressing over the pasta salad and toss gently until everything is well coated.
  6. Taste and adjust the seasoning if necessary.
  7. Chill in the refrigerator for at least 15 minutes before serving to let the flavors meld together.

Notes

This pasta salad is best served chilled or at room temperature. Can be stored in an airtight container in the refrigerator for up to 3 days.
