Ingredients
  

For the Chicken
  • 4 pieces chicken breasts pounded to even thickness for even cooking
  • 1 cup grated Parmesan cheese may substitute with different cheeses for variety
  • 1 cup breadcrumbs use seasoned breadcrumbs for added flavor
  • 2 large eggs beaten for breading
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup flour for coating the chicken
  • 2 tablespoons olive oil for searing the chicken
For the Creamy Garlic Sauce
  • 1 cup heavy cream can substitute with half-and-half or coconut milk
  • 4 cloves garlic minced
  • Fresh to taste parsley for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a shallow dish, mix together the Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
  3. Set up a breading station: place flour in one dish, beaten eggs in another, and the Parmesan mixture in a third.
  4. Coat each chicken breast in flour, dip it into the eggs, and then coat it with the Parmesan mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat and sear each chicken breast until golden brown, about 3-4 minutes on each side.
  2. Transfer the chicken breasts to a baking dish and bake for 15-20 minutes or until cooked through.
  3. In the same skillet, add the heavy cream and minced garlic, and cook until the sauce thickens.
  4. Serve the chicken topped with the creamy garlic sauce and garnish with fresh parsley.

Notes

For even cooking, pound the chicken to an even thickness before breading. Store leftovers in an airtight container for up to 3 days or freeze for longer storage.
