  • 1 bunch Parsley (fresh, prepped) Fresh parsley for flavor.
  • 2 cloves Garlic (minced) Minced for a strong garlic flavor.
  • 1 medium Fresno Pepper (or jalapeño as substitute) Adjust according to your spice preference.
  • 1 teaspoon Oregano (dried) Add earthy flavor.
  • 1/2 cup Extra Virgin Olive Oil (high quality) Use high-quality oil for best taste.
  • 2 tablespoons Red Wine Vinegar Provides acidity to balance the oil.
  • Salt, to taste

Shrimp Ingredients
  • 1 pound Shrimp (jumbo, peeled, and deveined) Use fresh or thawed shrimp.
  • 2 tablespoons Olive Oil (for marinade) For coating shrimp before cooking.
  • 1 tablespoon Honey Adds sweetness.
  • 1 teaspoon Smoked Paprika For a smoky flavor.

Method
 

Chimichurri Preparation
  1. In a medium bowl, combine the fresh parsley, minced garlic, and thinly sliced Fresno pepper.
  2. Add the dried oregano, high-quality extra virgin olive oil, red wine vinegar, and season with salt and fresh ground pepper to taste.
  3. Mix everything together until well combined and let it sit to allow the flavors to meld while you prepare the shrimp.
Shrimp Preparation
  1. In another bowl, toss the peeled and deveined shrimp with olive oil, honey, and smoked paprika.
  2. Ensure each shrimp is evenly coated with the marinade for maximum flavor. Let the shrimp marinate for about 10-15 minutes.
Cooking
  1. Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer.
  2. Cook for roughly 2-3 minutes on each side, or until the shrimp turn pink and opaque.
  3. Once cooked, remove the skillet from the heat and drizzle the chimichurri sauce over the shrimp, combining to coat.

Notes

Serve on a beautiful platter garnished with fresh parsley or slices of lemon. Pairs well with rice or a mixed greens salad.
