Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, ensuring they’re clean and ready to soak up flavors.
  3. In a large bowl, mix the olive oil, garlic powder, oregano, salt, and pepper.
  4. Add the potatoes to the bowl and toss to coat them evenly with the mixture.
  5. Spread the potatoes onto a baking sheet in a single layer.
  6. Sprinkle the grated Parmesan cheese generously over the potatoes.
Cooking
  1. Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender when pierced with a fork.
  2. Garnish with chopped parsley before serving.

Notes

Cut potatoes evenly for uniform cooking. Roasting at a high temperature helps achieve crispiness. Add extra cheese halfway through for a cheesy experience. Experiment with fresh herbs for a different flavor.
