Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, Parmesan cheese, salt, and pepper.
  3. Rub the mixture all over the Cornish hens, making sure to get under the skin for more flavor.
  4. Place the hens in a roasting pan and sprinkle fresh herbs on top.
Cooking
  1. Roast in the oven for about 1 hour, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  2. Let the hens rest for 10 minutes before serving.
