Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Rinse the Cornish hen and pat it dry with paper towels.
  3. Rub the hen with olive oil and generously season with salt, pepper, and your choice of herbs.
  4. Place fresh lemon slices inside the cavity of the hen.
Cooking
  1. Place the hen in a roasting pan.
  2. Bake for about 45-55 minutes or until the internal temperature reaches 165°F (75°C).
  3. Let it rest for a few minutes before serving.

Notes

Let the hen come to room temperature before cooking for even cooking. Basting halfway through can enhance crispiness. Store leftovers properly in the refrigerator for 3-4 days or freeze for up to 3 months. Consider variations like honey garlic glaze or citrus herb marinade.
