  • 1 cup orzo pasta cooked according to package instructions
  • 1 cup cherry tomatoes, halved fresh and ripe
  • 1 cucumber, diced use a fresh cucumber
  • 1/2 cup olives, sliced optional, can be omitted
  • 1/2 cup feta cheese, crumbled or substitute with goat cheese or mozzarella
  • 2 cups fresh spinach for added nutrition
  • 1/4 cup Italian dressing or your preferred dressing
  • to taste Salt and pepper for seasoning

Method
 

Preparation
  1. Cook orzo pasta according to package instructions, then drain and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, olives, feta cheese, and spinach.
  3. Add the cooled orzo pasta to the bowl.
  4. Drizzle with Italian dressing and toss gently to combine.
  5. Season with salt and pepper to taste.
  6. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Refresh flavors with additional dressing if necessary. Avoid freezing.
