Method
Cooking the Salmon
- In a skillet, heat olive oil over medium heat.
- Season the salmon fillets with salt and pepper, and place them in the skillet, cooking for about 4-5 minutes per side until cooked through.
- Remove the salmon and set aside.
Cooking the Orzo
- In the same skillet, add minced garlic and sauté for about 30 seconds.
- Add the orzo and toast for a minute, then pour in the vegetable broth (or water) and bring to a boil.
- Lower the heat, cover, and simmer for about 10 minutes until the orzo is cooked and has absorbed the liquid.
- Stir in lemon juice, lemon zest, and season with more salt and pepper to taste.
- Return the salmon to the skillet, warming it through for a minute.
Serving
- Garnish with fresh parsley before serving.

Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. To reheat, warm in the skillet over low heat, adding a splash of water or broth.
