Ingredients
  

Main ingredients
  • 2 fillets salmon fillets
  • 1 cup orzo pasta
  • 2 cups vegetable broth or water Use broth for more flavor.
  • 1 whole lemon (zested and juiced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Method
 

Cooking the Salmon
  1. In a skillet, heat olive oil over medium heat.
  2. Season the salmon fillets with salt and pepper, and place them in the skillet, cooking for about 4-5 minutes per side until cooked through.
  3. Remove the salmon and set aside.
Cooking the Orzo
  1. In the same skillet, add minced garlic and sauté for about 30 seconds.
  2. Add the orzo and toast for a minute, then pour in the vegetable broth (or water) and bring to a boil.
  3. Lower the heat, cover, and simmer for about 10 minutes until the orzo is cooked and has absorbed the liquid.
  4. Stir in lemon juice, lemon zest, and season with more salt and pepper to taste.
  5. Return the salmon to the skillet, warming it through for a minute.
Serving
  1. Garnish with fresh parsley before serving.
  2. Serve and enjoy your delicious meal!

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. To reheat, warm in the skillet over low heat, adding a splash of water or broth.
