  • 4 pieces chicken breasts Skin-on for extra crispiness, if desired
  • 1 pound small potatoes (baby potatoes) Halved before cooking
  • 2 tablespoons olive oil For cooking
Seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish) Such as parsley or thyme

Method
 

Cooking the Chicken
  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
  3. Add the seasoned chicken breasts to the skillet and cook until golden brown, about 5-7 minutes on each side.
Adding the Potatoes
  1. While the chicken is cooking, wash and halve the baby potatoes.
  2. Once the chicken is browned, place the halved potatoes around the chicken in the skillet.
Final Cooking
  1. Cover the skillet and let cook for an additional 15-20 minutes, or until the chicken is cooked through and the potatoes are tender.
  2. Garnish with fresh herbs if desired and serve warm.

Notes
