  • 2 cups fresh spinach Can substitute with frozen spinach if thawed and drained
  • 1 cup sliced mushrooms Any variety of mushrooms can be used
  • 1 tablespoon olive oil For sautéing the vegetables
  • 1 medium onion, chopped Adds flavor and moisture
  • 2 cloves garlic, minced Enhances overall taste
  • Salt and pepper, to taste Adjust seasoning as needed
  • 1 teaspoon Italian seasoning, optional For added flavor, can substitute with other herbs

Method
 

Cooking
  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and minced garlic; sauté until the onion is translucent.
  3. Add ground turkey to the skillet, season with salt, pepper, and Italian seasoning. Cook until no longer pink, breaking it up with a spoon.
  4. Stir in sliced mushrooms and cook for another 5 minutes until softened.
  5. Add fresh spinach and cook until wilted.
  6. Serve hot.
