Ingredients
  

For the crust and topping
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 2 cups all-purpose flour Can substitute with gluten-free baking blend.
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract Can substitute with almond extract for a nutty flavor.
For the filling
  • 1 can (21 oz) cherry pie filling Feel free to use fresh or frozen cherries instead.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  2. In a bowl, cream together the butter and sugar until smooth.
  3. Mix in the flour, salt, and baking powder until well combined.
  4. Press half of this mixture into the bottom of the prepared pan.
  5. Spread the cherry pie filling evenly over the crust.
  6. In another bowl, combine the remaining crumb mixture with the oats, brown sugar, and vanilla extract.
  7. Sprinkle this mixture over the cherry filling.
Baking
  1. Bake for 30-35 minutes or until the top is golden brown.
  2. Allow to cool before cutting into bars and serving.

Notes

These bars can be served warm or at room temperature. Pair with vanilla ice cream or whipped cream for a special touch.
