Ingredients
  

Crust
  • 1 package Oreo cookies Crushed for crust
  • 1/2 cup unsalted butter Melted
Filling
  • 2 cups cream cheese Softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream Gently folded in
  • Extra cookies Oreo cookies For topping

Method
 

Preparation
  1. Crush Oreo cookies in a food processor until fine crumbs form.
  2. Mix the crumbs with melted butter and press the mixture into the bottom of a greased 9x9 inch pan to create a crust.
Filling
  1. In a bowl, beat softened cream cheese until smooth.
  2. Gradually add powdered sugar and vanilla extract, mixing until fully combined.
  3. Gently fold in whipped cream until the mixture is light and fluffy.
Assembly
  1. Spread the cream cheese mixture evenly over the crust in the pan.
  2. Crush additional Oreo cookies and sprinkle on top of the cheesecake layer.
Chilling
  1. Refrigerate for at least 4 hours, or until set.
  2. Cut into bars and serve chilled.

Notes

These bars can be served with whipped cream on top, or accompanied by fresh berries or chocolate sauce. They should be stored in an airtight container in the refrigerator and can also be frozen for up to three months.
