Ingredients
  

Crust
  • 1 cup graham cracker crumbs
  • 1/2 cup melted butter Ensure fully melted for better crust consistency.
Filling
  • 1 package (8 oz) cream cheese, softened Let it sit at room temperature for smooth mixing.
  • 1 cup powdered sugar
  • 1/2 cup lemon juice Freshly squeezed is recommended.
  • 1 teaspoon lemon zest For an extra layer of flavor.
  • 1 cup whipped cream Fold in gently for a light texture.
Topping
  • 2 cups blueberries Fresh blueberries recommended.

Method
 

Preparation
  1. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9x9 inch pan to create the crust.
  2. In another bowl, beat the cream cheese and powdered sugar together until smooth.
  3. Add lemon juice and lemon zest to the cream cheese mixture, mixing until well incorporated.
  4. Gently fold in the whipped cream until just combined.
Assembly
  1. Pour the cream mixture over the crust and spread it evenly.
  2. Top with blueberries and refrigerate for at least 4 hours until set.
  3. Serve chilled, optionally garnishing with more whipped cream and blueberries.

Notes

Store leftovers in the refrigerator for up to 3 days. Cover with plastic wrap or store in an airtight container to maintain freshness. Ideal to serve cold.
