- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press this mixture into the bottom of a 9x9 inch pan to create the crust.
- In another bowl, beat the cream cheese and powdered sugar together until smooth.
- Add lemon juice and lemon zest to the cream cheese mixture, mixing until well incorporated.
- Gently fold in the whipped cream until just combined.
Assembly
- Pour the cream mixture over the crust and spread it evenly.
- Top with blueberries and refrigerate for at least 4 hours until set.
- Serve chilled, optionally garnishing with more whipped cream and blueberries.
Notes
