  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cocoa powder
  • 1/4 cup strawberry jam
  • 1/4 cup milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In a separate bowl, mix the flour, baking powder, and salt. Gradually blend the dry ingredients into the creamed mixture.
  5. Divide the dough into three equal parts.
  6. In the first part, stir in the cocoa powder. In the second part, mix in the strawberry jam. Leave the third part plain.
  7. Roll each portion into logs. Place the logs side by side and gently roll them together to form a swirl.
  8. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Baking
  1. Slice the dough into rounds and place them on the prepared baking sheets.
  2. Bake for 10-12 minutes in the preheated oven, or until the edges are lightly golden.
  3. Allow the cookies to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For an extra touch of flavor, consider using flavored or homemade jam instead of store-bought strawberry jam. Ensure that the butter is softened properly for easy creaming, which helps create a fluffy texture. Keep an eye on them while baking; ovens can vary in temperature.
