Ingredients
  

For the Chicken
  • 1 lb boneless chicken thighs, cut into 1-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon cracked pepper
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
For the Vegetables
  • 8 ounces sliced brown mushrooms Fresh is recommended.
  • 3 tablespoons butter
  • 1 tablespoon brown shallot, chopped
  • 1 tablespoon green bell pepper, seeded and chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons oil (divided)

Method
 

Preparation
  1. In a bowl, toss chicken pieces with salt, pepper, Italian seasoning, garlic powder, onion powder, and paprika until evenly coated.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
Cooking
  1. Add the chicken in a single layer and sear until golden brown and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  2. In the same skillet, add the remaining oil and butter.
  3. Add mushrooms, bell pepper, and shallot, sautéing until the mushrooms are tender and golden.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Return the cooked chicken to the skillet and toss to combine with the vegetables.
  6. Remove from heat, garnish with fresh parsley, and serve immediately.

Notes

For extra flavor, marinate the chicken for 30 minutes in the seasoning mix before cooking. Use fresh herbs whenever possible; they uplift the dish with vibrant flavor. Can be served as finger food or over rice.
