Main Ingredients
  • 4 pieces chicken thighs, bone-in and skin-on
  • 3 tablespoons miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Method

Preparation

  2. In a bowl, mix together miso paste, soy sauce, honey, rice vinegar, sesame oil, and minced garlic to create a marinade.
  3. Season the chicken thighs with salt and pepper, then coat them in the marinade. Let marinate for at least 30 minutes.
Cooking
  1. Place the marinated chicken thighs skin-side up on a baking sheet.
  2. Bake in the preheated oven for about 25-30 minutes, or until the chicken is fully cooked and the skin is crispy.
Serving
  1. Serve with rice and steamed vegetables for a complete meal. Enjoy!

Notes

For crispy skin, broil the chicken for the last few minutes of cooking without letting it burn. Miso types vary in flavor—experiment to find your favorite. Leftovers can be stored in an airtight container for up to 3 days.
