Ingredients
  

Main ingredients
  • 1 cup Greek yogurt Use full-fat for best texture
  • 1/2 cup cottage cheese Use full-fat for best results
  • 1/4 cup protein powder Opt for neutral or vanilla-flavored
  • 3 tablespoons honey or maple syrup Adjust sweetness to taste
  • 1 teaspoon vanilla extract
Optional crust
  • 1/4 cup crushed graham crackers For crust, optional
Optional toppings
  • Fresh berries For topping, optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) if using a mini cheesecake pan.
  2. In a mixing bowl, combine Greek yogurt, cottage cheese, protein powder, honey, and vanilla extract until smooth.
  3. If using, press the crushed graham crackers into the bottom of the mini cheesecake pan to form a crust.
  4. Pour the cheesecake mixture over the crust or directly into the pan if not using a crust.
Baking
  1. Bake for about 15-20 minutes or until set.
  2. Allow to cool, then refrigerate for a few hours before serving.
Serving
  1. Top with fresh berries if desired.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to one month. Thaw in the refrigerator overnight before serving.
