Ingredients
  

Cheese Ball Mixture
  • 8 oz cream cheese, softened Make sure it's softened for easier mixing.
  • 1/2 cup crushed pineapple, drained Thoroughly drained to prevent sogginess.
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup toasted pecans, chopped Additional for rolling optional.
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Method
 

Preparation
  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add the drained pineapple, chopped cranberries, chopped pecans, powdered sugar, vanilla extract, and salt. Mix until well combined.
  3. Scoop out small portions of the mixture and roll them into balls.
  4. If desired, roll each cheese ball in additional chopped pecans for an extra crunch.
  5. Refrigerate for at least 1 hour before serving to allow them to firm up.
Serving Suggestions
  1. Serve as an appetizer at holiday gatherings or any festive occasion.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Best if rolled in additional pecans just before serving.
