- Add the drained pineapple, chopped cranberries, chopped pecans, powdered sugar, vanilla extract, and salt. Mix until well combined.
- Scoop out small portions of the mixture and roll them into balls.
- If desired, roll each cheese ball in additional chopped pecans for an extra crunch.
- Refrigerate for at least 1 hour before serving to allow them to firm up.
