  • 1 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/2 cup olive oil Use high-quality for the best flavor
  • 1/4 cup fresh basil, chopped Alternatives: dried basil can be used, 1/3 amount.
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. In a bowl, combine the chopped sun-dried tomatoes and minced garlic.
  2. Add the olive oil and balsamic vinegar, mixing well.
  3. Stir in the chopped basil, and season with salt and pepper to taste.
  4. Serve immediately with bread or crackers, or let it chill in the fridge for a couple of hours for the flavors to meld.

Notes

This dip can be stored in an airtight container in the refrigerator for about 3 to 5 days. For longer storage, freeze in an ice cube tray.
