Preparation

- Add fresh spinach and cook until wilted. Remove from heat and let cool.
Combining Filling
- In a bowl, combine the cooled spinach, crumbled feta, herbs, salt, and pepper.
Assembly
- Lay out sheets of phyllo dough and brush each layer with olive oil.
- Place small amounts of the spinach and feta mixture on one end of the phyllo and roll it up, sealing the edges.
- Arrange the rolled crisps on a baking sheet.
- Bake for 15-20 minutes, or until golden brown.

- Serve warm as a snack or appetizer.
