Mediterranean Spinach and Feta Crisps

Ingredients
  

For the filling
  • 1 cup Fresh spinach Well-drained and chopped
  • 1 cup Feta cheese Crumbled
  • 2 tablespoons Mediterranean herbs E.g., oregano and thyme
  • 1 clove Garlic Minced
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
For the crisp base
  • 1 pack Phyllo dough
  • 2 tablespoons Olive oil For brushing

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant.
  3. Add fresh spinach and cook until wilted. Remove from heat and let cool.
Combining Filling
  1. In a bowl, combine the cooled spinach, crumbled feta, herbs, salt, and pepper.
Assembly
  1. Lay out sheets of phyllo dough and brush each layer with olive oil.
  2. Place small amounts of the spinach and feta mixture on one end of the phyllo and roll it up, sealing the edges.
  3. Arrange the rolled crisps on a baking sheet.
  4. Bake for 15-20 minutes, or until golden brown.
Serving
  1. Serve warm as a snack or appetizer.

Notes

To store leftovers, keep them in an airtight container in the refrigerator for up to three days. Reheat in the oven for about 10 minutes for best results.
