Ingredients
  

Seafood
  • 1 lb Large shrimp, peeled (Fresh or frozen) Make sure to thaw if using frozen
Cooking Essentials
  • 2 tbsp Olive oil (Or avocado oil)
  • 3 cloves Garlic, minced (Or garlic powder)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Paprika (Smoked paprika for depth)
  • 1/2 tsp Red pepper flakes (Optional)
Produce
  • 1 cup Cherry tomatoes, halved (Other tomatoes may be used) Use ripe tomatoes for the best flavor
  • 1/4 cup Fresh parsley, chopped (Or cilantro)
  • 2 tbsp Lemon juice, freshly squeezed (Or balsamic vinegar)
  • 1 Lemon wedges (For serving)
Dairy
  • 1 cup Feta cheese, crumbled (Or goat cheese) Can substitute goat cheese for a different flavor
Spices & Herbs
  • 1 tbsp Dried oregano (Or fresh oregano) Fresh oregano will enhance the flavor

Method
 

Preparation
  1. Heat the olive oil in a large skillet over medium heat.
  2. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant.
Cooking
  1. Add the shrimp to the skillet. Cook for 2-3 minutes on each side or until they turn pink and opaque. Season with salt, black pepper, paprika, and red pepper flakes if using.
  2. Stir in the cherry tomatoes and cook for an additional 2 minutes until the tomatoes start to soften.
  3. Remove the skillet from heat and stir in the crumbled feta cheese, oregano, and fresh parsley.
  4. Drizzle the freshly squeezed lemon juice over the top and mix gently to combine.
Serving
  1. Serve warm with lemon wedges on the side for an extra burst of freshness.
