  • 1 cup cherry tomatoes, halved Use fresh for the best taste; canned can substitute but adjust cooking time.
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese or ricotta for a milder taste.

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced Sauté until fragrant.
  • 1 teaspoon dried oregano Can be replaced with fresh herbs.
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Method
 

Cooking
  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the shrimp to the skillet, season with salt, pepper, and oregano, and cook until the shrimp turns pink, about 3-4 minutes.
  4. Stir in the cherry tomatoes and cook for an additional 2-3 minutes until the tomatoes are slightly softened.
  5. Remove from heat and sprinkle with feta cheese and fresh parsley.

Notes
