  • 4 large large eggs
  • 1/4 cup feta cheese, crumbled Use high-quality feta for best flavor.
  • 1/4 cup sun-dried tomatoes, chopped Make sure they are not oily.
  • 1 cup fresh spinach, chopped Wash and chop before adding.
  • Salt and pepper to taste
  • Olive oil for cooking A splash to coat the pan.
  • Optional: fresh herbs for garnish Consider parsley or basil.

Method
 

Preparation
  1. In a bowl, whisk together the eggs, salt, and pepper until well combined.
  2. Heat a non-stick skillet over medium heat and add a splash of olive oil to coat the pan.
  3. Add the chopped sun-dried tomatoes to the skillet and cook for 1-2 minutes until they are warmed and fragrant.
  4. Toss in the chopped spinach and cook until wilted, about a couple of minutes.
Cooking
  1. Pour the whisked eggs into the skillet and gently stir with a spatula, allowing them to cook until they are scrambled but still soft.
  2. Once the eggs are almost set, fold in the crumbled feta cheese.
  3. Remove from heat and serve immediately, garnished with fresh herbs if desired.

Notes

Serve Mediterranean Scrambled Eggs immediately for the best texture. Can be served with crusty whole-grain bread or a side salad.
