  • 4 pieces Lemon herb chicken Marinated in lemon juice and herbs
For the Bowl
  • 1 cup Quinoa Cooked according to package instructions
  • 1 cup Hummus Can be store-bought or homemade
  • 2 cups Vegetables (e.g., cucumber, bell pepper, cherry tomatoes) Chopped into bite-sized pieces
  • 1/2 cup Feta cheese Crumbled
  • 1/2 cup Olives Kalamata or your preferred variety
For the Dressing
  • 1 cup Yogurt Greek yogurt recommended
  • 2 tablespoons Olive oil Extra virgin for flavor
  • 2 tablespoons Lemon juice Freshly squeezed

Method
 

Preparation
  1. Cook the quinoa according to package instructions and let it cool.
  2. Marinate the chicken in lemon juice, herbs, salt, and pepper, then grill or pan-cook until fully cooked.
  3. While the chicken is cooking, prepare the yogurt dressing by mixing yogurt with olive oil, lemon juice, salt, and pepper.
  4. Chop the crisp vegetables into bite-sized pieces.
Assembly
  1. In a bowl, layer quinoa, sliced chicken, hummus, chopped vegetables, crumbled feta, and olives.
  2. Drizzle the yogurt dressing on top and serve.

Notes

For extra flavor, consider using herbs like oregano and thyme when marinating the chicken. Cook quinoa in vegetable or chicken broth for added taste. You can make your hummus at home for a fresher option.
