  • 1 cup long-grain rice
  • 1/2 cup brown or green lentils
  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Rinse lentils and cook in boiling water for about 15 minutes until just tender, then drain and set aside.
Cooking
  1. Heat olive oil in a large pot over medium heat and sauté diced onion for 4–5 minutes until soft.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in rice, cumin, paprika, and oregano, coating the rice with oil and spices.
  4. Pour in vegetable broth, bring to a boil, then reduce heat, cover, and simmer for 12–15 minutes.
  5. Add cooked lentils, gently mix, and cook for another 5 minutes until rice is tender and liquid is absorbed.
  6. Remove from heat and stir in lemon juice, parsley, and crumbled feta cheese.
  7. Season with salt and black pepper to taste and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat with a splash of water to prevent sticking.
