- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, smoked paprika, salt, and pepper.
- Add the shrimp to the bowl and ensure they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes.
Cooking
- Preheat the grill to medium-high heat.
- Thread the marinated shrimp onto skewers.
- Grill the shrimp skewers for about 2-3 minutes per side, or until the shrimp are opaque and cooked through.
- Remove from grill, garnish with fresh parsley, and serve.
Notes
If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Store leftovers in an airtight container for up to 2 days.
