Ingredients
  

For the Chicken
  • 1 lb chicken breast, marinated Marinate in olive oil, salt and pepper.
  • 2 tbsp olive oil
  • 1 tsp salt To taste
  • 1 tsp pepper To taste
For the Bowl
  • 1 cup cooked rice (white or brown)
  • 1 cup lettuce, shredded
  • 1 cucumber diced
  • 1 tomato diced
  • 1 red onion thinly sliced
  • 1/2 cup tzatziki sauce For drizzling
  • optional pieces pita bread or flatbreads For serving

Method
 

Preparation
  1. Marinate the chicken in olive oil, salt, and pepper for at least 30 minutes.
  2. While the chicken marinates, cook the rice according to package instructions.
  3. Dice the cucumber, tomato, slice the onion, and shred the lettuce.
Cooking
  1. Grill the marinated chicken over medium heat for about 6-7 minutes on each side, or until cooked through.
  2. Remove the chicken from the grill and let it rest for a few minutes before slicing.
Assembly
  1. In a bowl, layer the cooked rice, followed by the diced cucumber, tomato, sliced onion, and shredded lettuce.
  2. Add the grilled chicken sliced on top of the vegetables.
  3. Drizzle with tzatziki sauce and serve with pita bread or flatbreads if desired.

Notes

For best flavor, marinate the chicken longer if possible. Customize toppings with avocados, bell peppers, or olives as desired. Store leftovers in an airtight container for up to three days, keeping tzatziki sauce separate.
