Preparation

Cooking

- Remove the chicken from the grill and let it rest for a few minutes before slicing.
Assembly
- In a bowl, layer the cooked rice, followed by the diced cucumber, tomato, sliced onion, and shredded lettuce.
- Add the grilled chicken sliced on top of the vegetables.
- Drizzle with tzatziki sauce and serve with pita bread or flatbreads if desired.
Notes
For best flavor, marinate the chicken longer if possible. Customize toppings with avocados, bell peppers, or olives as desired. Store leftovers in an airtight container for up to three days, keeping tzatziki sauce separate.
