Ingredients
  

For the Sandwich
  • 4 slices sourdough or artisan bread
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, finely chopped
  • 6-8 leaves fresh basil, torn
  • 2 tablespoons black olives, sliced
  • 1 clove garlic, minced (optional)
  • 2 tablespoons butter, softened (or olive oil)
  • 1 tablespoon pesto, crushed red pepper, or baby spinach leaves (optional)

Method
 

Preparation
  1. Lay out the bread slices and butter one side of each slice.
  2. On the unbuttered side, layer the shredded mozzarella and crumbled feta.
  3. Add sun-dried tomatoes, olives, basil, and optional garlic or pesto.
  4. Top with the remaining bread slices, buttered side facing out.
Cooking
  1. Heat a skillet over medium-low heat and place the sandwiches in the pan.
  2. Cook for 3–4 minutes per side, pressing lightly with a spatula to ensure even melting.
  3. Remove from skillet and let rest for 1 minute.
  4. Slice and serve warm with soup, salad, or pickles.

Notes

For extra flavor, try adding spices to your butter or oil before grilling. Make sure your skillet isn’t too hot to prevent burning. Experiment with other cheeses like provolone or goat cheese for different flavors.
