Preparation
- Pat the cod fillets dry with paper towels and season both sides with salt and black pepper.
- Heat the olive oil in a large skillet over medium heat.
- Add the diced onion and cook for about 5 minutes until translucent and soft.
- Add minced garlic and cook for 1 more minute until aromatic.
Cooking
- Pour in the crushed tomatoes and vegetable broth. Stir in the dried oregano and smoked paprika.
- Let the sauce simmer gently for 10 minutes to blend flavors and thicken.
- Carefully place cod fillets into the simmering sauce, spooning some sauce over the top of each fillet.
- Cover the skillet and cook for 8 to 10 minutes, or until the fish is opaque and flakes easily with a fork.
- Remove from heat and stir in fresh chopped basil gently.
- Serve with a squeeze of fresh lemon juice over the top.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to a month. For a simpler dinner, serve with crusty bread or couscous.
