  • 1/2 cup Sun-dried tomatoes Minced for better flavor distribution.
  • 4 cups Fresh spinach Wilted before topping the salmon.
  • 1 cup Feta cheese Crumbled, can substitute with goat cheese.
  • 2 tablespoons Olive oil Used for drizzling over salmon.
  • 2 cloves Garlic Minced for flavor.
  • 2 tablespoons Lemon juice Freshly squeezed for best flavor.
  • to taste Salt For seasoning.
  • to taste Pepper For seasoning.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the salmon fillets and drizzle with olive oil.
  3. Season the salmon with salt and pepper.
  4. Top the salmon with minced garlic, sun-dried tomatoes, wilted spinach, and crumbled feta cheese.
  5. Squeeze fresh lemon juice over the top.
Cooking
  1. Bake for 20 minutes or until the salmon is flaky and cooked through.

Notes
