Ingredients
  

Base Ingredients
  • 2 tablespoons olive oil For sautéing the vegetables.
  • 1 cup onion, chopped
  • 2 cups carrots, sliced
  • 2 cups celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon fresh thyme Can substitute with dried if fresh is unavailable.
  • 1 teaspoon fresh rosemary Can substitute with dried if fresh is unavailable.
  • 8 cups vegetable broth Store-bought or homemade.
  • to taste Salt and pepper Adjust according to preference.
Optional Add-ins
  • 1 cup mushrooms, sliced For additional flavor and texture.
  • 1 cup leafy greens (spinach, kale, etc.) For extra nutrients.

Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the garlic, thyme, and rosemary, cooking for another minute.
Cooking
  1. Pour in the vegetable broth and bring to a boil.
  2. Reduce the heat and let it simmer for 20-30 minutes.
  3. Season with salt and pepper to taste.
  4. If using, add mushrooms and leafy greens, and simmer for an additional 5 minutes.
Serving
  1. Serve hot and enjoy the healing effects!

Notes

For best flavor, always sauté your vegetables. Use fresh herbs or leftovers as desired. Broth can be strained for a clearer result if preferred.
