  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 2 cups spinach Can add other vegetables like bell peppers or peas.
  • 2 tbsp olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add onions, carrots, and celery, and sauté until softened.
  3. Stir in the garlic and cook for an additional minute.
Cooking
  1. Pour in the chicken broth and bring to a simmer.
  2. Add the shredded chicken and let cook for about 10 minutes.
  3. Stir in the heavy cream and spinach, cooking until the spinach is wilted.
  4. Season with salt and pepper to taste.

Notes
