Ingredients
  

For the Chicken and Marinade
  • 2 pieces chicken breasts Can use precooked chicken for quicker preparation.
  • 3 tablespoons maple syrup Can substitute honey if necessary.
  • 2 tablespoons Dijon mustard Can substitute with honey mustard or yellow mustard.
  • 2 tablespoons olive oil
  • to taste Salt
  • to taste Pepper
For the Sweet Potatoes
  • 2 pieces sweet potatoes Peel and dice into even cubes for uniform cooking.
Optional Garnish
  • 2 cups mixed greens or spinach For serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into cubes.
  3. In a bowl, mix the maple syrup, Dijon mustard, olive oil, salt, and pepper.
  4. Coat the chicken breasts in the maple-Dijon mixture and place them on a baking sheet.
Cooking
  1. Add the sweet potatoes to the sheet pan, tossing them in any remaining marinade.
  2. Roast everything in the oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
Serving
  1. Serve the chicken and sweet potatoes over a bed of mixed greens or spinach if desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. This recipe is also excellent for meal prepping.
