Preparation
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes into cubes.
- In a bowl, mix the maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Coat the chicken breasts in the maple-Dijon mixture and place them on a baking sheet.
Cooking
- Add the sweet potatoes to the sheet pan, tossing them in any remaining marinade.
- Roast everything in the oven for 25-30 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
Serving
- Serve the chicken and sweet potatoes over a bed of mixed greens or spinach if desired.
Notes
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. This recipe is also excellent for meal prepping.
