Ingredients
  

For the Cookies
  • 1 cup unsalted butter Make sure to brown the butter
  • 1 cup chopped pecans Toast for enhanced flavor
  • 1 cup brown sugar, firmly packed
  • 1/2 cup white granulated sugar
  • 1 large egg, room temperature
  • 2 tablespoons pure maple syrup
  • 1 teaspoon alcohol-free vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt Reduce if using salted butter

Method
 

Preparation
  1. Place the butter in a medium saucepan over medium heat. Melt and cook, stirring constantly, until it smells nutty and looks golden brown.
  2. Pour the browned butter into a large bowl and let cool.
  3. In a dry skillet, toast the chopped pecans over medium heat for about 3 to 5 minutes, stirring often. Set aside.
  4. Once the butter is cool, add the brown sugar and white sugar. Whisk until smooth.
  5. Add the egg, maple syrup, and vanilla extract. Whisk until shiny and well combined.
  6. In a separate bowl, whisk together the flour, baking soda, and salt.
  7. Gradually add the dry ingredients to the wet mixture, stir gently with a spatula until just combined. Do not overmix.
  8. Fold in the toasted pecans until evenly distributed.
  9. Cover the bowl and refrigerate the dough for at least 30 minutes.
Baking
  1. Preheat the oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Scoop rounded tablespoons of dough and place them 2 inches apart on the prepared sheets.
  3. Bake for 10 to 12 minutes until the edges are golden brown and the centers are slightly soft.
  4. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm with coffee or tea. Store in an airtight container at room temperature for up to a week. Can be frozen for up to three months.
