  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour blend.
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1 cup milk
  • 1/2 cup fresh lemon juice About 2-3 lemons.
  • 1 each lemon, zest
  • 1/4 cup unsalted butter, melted
Optional
  • Powdered sugar (for dusting) Optional for serving.

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish.
  2. In a mixing bowl, combine the granulated sugar, flour, baking powder, and salt.
  3. Gradually whisk in the milk until smooth.
  4. Stir in the fresh lemon juice, lemon zest, and melted butter. Mix until everything is well combined.
  5. Pour the batter into the prepared baking dish without stirring.
Baking
  1. Bake for about 35-40 minutes, or until the top becomes golden brown and springs back when touched.
  2. Allow it to cool slightly before serving. Dust with powdered sugar, if desired.

Notes

For a stronger lemon flavor, add more zest or juice. Ensure the butter is melted before mixing. If fresh lemons are unavailable, bottled lemon juice can be used, but fresh is always better. Grease the baking dish thoroughly to prevent sticking.
