Ingredients
  

For the Chicken
  • 6 oz boneless, skinless chicken breast uniform thickness, about 1 inch
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp BBQ sauce divided: 2 tbsp for chicken, 1 tbsp for drizzling
For the Bowl Assembly
  • 1/2 cup cooked brown rice prepare in advance or use leftover rice
  • 1 cup chopped romaine lettuce
  • 1/4 cup black beans rinsed and drained
  • 1/4 cup corn frozen or canned
  • 1/4 cup cherry tomatoes halved
  • 1/4 medium avocado about 2 oz, sliced
  • 2 tbsp shredded cheddar cheese
  • 1 tbsp ranch dressing Greek yogurt-based preferred

Method
 

Preparation
  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Combine olive oil, garlic powder, onion powder, smoked paprika, salt, and black pepper in a small bowl to create your spice rub.
  3. Pat chicken breast dry with paper towels and rub the spice mixture all over the chicken.
  4. Place the chicken on the prepared baking sheet and bake for 20-25 minutes until the internal temperature reaches 165°F.
Assembling the Bowl
  1. Let the chicken rest for 5 minutes after removing it from the oven.
  2. Dice the vegetables and prep your bowl components.
  3. Dice the rested chicken into bite-sized pieces and toss with 2 tablespoons of BBQ sauce.
  4. Start with the brown rice as your base and create sections with romaine, black beans, corn, cherry tomatoes, and avocado.
  5. Top with the BBQ chicken, sprinkle with cheddar cheese, and finish with ranch dressing and remaining BBQ sauce.

Notes
