For the Salad
  • 2 cups Macaroni pasta Use your preferred type of macaroni.
  • 1 cup Roasted red peppers Chopped.
  • 1/2 cup Peppadews Chopped.
  • 1/2 cup Pepperoncini Sliced.
For the Dressing
  • 1 clove Garlic Minced.
  • 1 cup Mayonnaise You can use vegan mayonnaise as a substitute.
  • 2 tablespoons Mustard Adjust to taste for more kick.
  • 1/2 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.

Method
 

Preparation
  1. Cook the macaroni pasta according to the package instructions, then drain and let it cool.
  2. In a large bowl, combine the cooled macaroni, roasted red peppers, Peppadews, and pepperoncini.
  3. In a separate bowl, mix together the garlic, mayonnaise, mustard, salt, and pepper to create the dressing.
  4. Pour the dressing over the macaroni salad and toss to combine.
Serving
  1. Serve chilled and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. Stir before serving as the dressing may separate.
