  • 1 cup shredded cheese (mozzarella or a cheese blend)
  • 1/2 cup diced bell peppers (any color)
  • 1/2 cup diced onions
  • 1 cup cooked chicken (shredded or your preferred protein) Can substitute with ground beef, turkey, sausage, or chickpeas for a vegetarian option.
  • 1/2 cup marinara sauce (sugar-free or low-carb)
  • 1 teaspoon Italian seasoning
  • 1/4 cup sliced olives (optional)
  • to taste salt and pepper
  • Fresh basil leaves for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the cooked chicken, diced bell peppers, diced onions, and olives. Mix well.
  3. Add the marinara sauce, Italian seasoning, salt, and pepper to the bowl. Stir until all ingredients are evenly coated.
  4. In a baking dish, spread the mixture evenly.
  5. Top with shredded cheese, creating a nice, even layer over the top.
  6. Bake in the preheated oven for about 20-25 minutes, or until the cheese is bubbly and golden.
  7. Once done, remove from the oven and let it cool slightly before garnishing with fresh basil leaves.

Notes

If you have leftovers, store in an airtight container in the fridge for up to 3 days. Reheat in the microwave or oven.
