Ingredients

  • 4 pieces Chicken breast Boneless and skinless
  • 2 cups Zucchini Chopped into bite-sized pieces
  • 2 cups Bell peppers Chopped into bite-sized pieces
  • 2 tablespoons Olive oil
  • 2 cloves Garlic Minced
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Chop the zucchini and bell peppers into bite-sized pieces.
  3. In a bowl, toss the chicken breast with olive oil, minced garlic, salt, and pepper.
Cooking
  1. Spread the chicken and vegetables on a baking sheet.
  2. Bake for 25-30 minutes or until the chicken is cooked through.
Serving
  1. Serve warm, optionally with a side salad or a light yogurt dip.

Notes

To store leftovers, allow to cool, transfer to an airtight container and refrigerate for up to 3 days. Can be frozen for up to 2 months.
