Ingredients
  

Chicken and coating
  • 4 pieces chicken breasts, boneless skinless
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese divided
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

Preparation and Dredging
  1. Preheat your oven to 375°F (190°C).
  2. In one dish, mix the breadcrumbs, half of the Parmesan cheese, and the Italian seasoning.
  3. In another bowl, beat together the eggs and milk.
  4. In a third dish, place the flour.
  5. Coat each chicken breast in flour, then dip into the egg mixture, and finally press into the breadcrumb mixture.
Cooking
  1. Heat the olive oil in a skillet over medium heat.
  2. Cook the chicken pieces for 3-4 minutes on each side or until golden brown.
  3. Transfer the chicken to a baking dish.
  4. In a bowl, mix the remaining Parmesan, mozzarella, and minced garlic, then spread over each chicken breast.
Baking
  1. Bake in the preheated oven for 20-25 minutes, until the chicken is cooked through and the cheese is melted.

Notes

Serve hot with a garden salad, mashed potatoes, or roasted vegetables. Reheat in the oven for best results.
