  • 2 slices slices of bread Choose a sturdy bread like sourdough.
  • 2 tablespoons butter Use for grilling the sandwich.
  • 1 cup cooked lobster meat, chopped Ensure lobster is cooked before use.
  • 1 cup shredded cheese Cheddar or mozzarella recommended.
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat a skillet over medium heat.
  2. Butter one side of each slice of bread.
Assembly
  1. Place one slice of bread butter-side down in the skillet.
  2. Top with a layer of cheese, followed by the chopped lobster, and then another layer of cheese.
  3. Place the second slice of bread on top, butter-side up.
Cooking
  1. Cook until the bottom slice is golden brown, about 3-4 minutes.
  2. Carefully flip the sandwich and cook the other side until golden and the cheese has melted, about another 3-4 minutes.
Serving
  1. Remove from heat, slice in half, and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a skillet over low heat.
