Preparation
- Start by preparing all your fresh ingredients. Slice the chicken into uniform 1-inch cubes to ensure even cooking.
- Toss the chicken in a bowl with the taco seasoning until every piece is thoroughly coated.
- If you are using fresh corn or making your own rice, get those started now. Chop the lettuce, dice the avocado, and rinse the black beans so everything is ready for assembly.
Cooking
- Place a large skillet over medium-high heat and add the olive oil.
- Once the oil is shimmering, add the seasoned chicken. Cook the chicken for about 6 to 8 minutes, stirring occasionally, until it is golden brown and cooked through (the internal temperature should reach 165°F).
- In the last two minutes of cooking, you can add the corn and black beans to the skillet just to warm them through with the chicken juices, or keep them separate if you prefer cold toppings.
Plating
- Divide the cooked rice into four bowls. Top the rice with a generous portion of the taco-seasoned chicken, beans, and corn.
- Add a handful of shredded lettuce to each bowl. Finish by layering on the avocado, salsa, shredded cheese, and a dollop of sour cream.
- Garnish with fresh cilantro and a squeeze of lime juice right before serving to brighten all the flavors.
Notes
To take these bowls to the next level, try searing the chicken in a cast-iron skillet to get those crispy, charred edges. If you have time, let the seasoned chicken marinate for 30 minutes before cooking to deepen the flavor. Always use fresh lime juice instead of the bottled version; the acidity cuts through the richness of the avocado and cheese perfectly. If you are meal prepping, store the fresh toppings (lettuce, avocado, sour cream) in separate containers from the warm components to keep everything crisp.
