  • 1 lemon lemon (juice and zest)
  • 2 tablespoons olive oil For drizzling over vegetables.
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
For the Vegetables
  • Assorted vegetables (e.g., bell peppers, zucchini, broccoli) Feel free to customize based on seasonal availability.
  • Fresh herbs (e.g., parsley, dill) for garnish Add just before serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix yogurt, lemon juice, lemon zest, garlic powder, salt, and pepper.
  3. Place the salmon fillets on a baking sheet lined with parchment paper and spread the yogurt mixture on top.
  4. Arrange the chopped vegetables around the salmon and drizzle with olive oil, salt, and pepper.
Cooking
  1. Bake for 15-20 minutes until the salmon is cooked through and the vegetables are tender.
  2. Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
