  • 1 cup unsalted butter, softened Make sure it's softened, not melted.
  • 1/2 cup powdered sugar, plus more for coating Additional for rolling after baking.
  • 1 tablespoon lemon zest Add more for extra lemon flavor.
  • 2 cups all-purpose flour Can substitute with gluten-free blend.
  • 1/4 teaspoon salt Optional if using salted butter.
  • 1/2 teaspoon vanilla extract Enhances flavor.
  • 1/4 cup finely chopped nuts (optional) Use pecans or almonds for variation.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream the softened butter and 1/2 cup of powdered sugar until light and fluffy.
  3. Add the lemon zest and vanilla extract, mixing until well combined.
  4. Gradually add the flour and salt, mixing until just combined. If using, fold in the chopped nuts.
  5. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes, or until the bottoms are lightly golden.
  2. Allow the cookies to cool for a few minutes, then roll them in powdered sugar while still warm.
  3. Let them cool completely on a wire rack before serving.

Notes

Store cookies in an airtight container at room temperature for up to one week. Refrigerate for longer storage up to two weeks or freeze for up to three months.
