  • 2 pounds baby potatoes, halved Ensure even sizes for uniform cooking.
  • ½ cup crumbled feta cheese Add towards the end of cooking to soften.
  • ¼ cup olive oil For roasting the potatoes.
  • 1 whole lemon, juiced and zested Fresh lemon is preferable.
  • 2 cloves garlic, minced Enhances flavor of the potatoes.
  • 1 teaspoon dried oregano Or use fresh herbs for more flavor.
  • Salt and pepper to taste Salt and pepper to taste Season generously.
  • Fresh parsley, chopped Fresh parsley, chopped for garnish For serving.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved baby potatoes, olive oil, minced garlic, lemon juice, oregano, salt, and pepper. Toss until the potatoes are well-coated.
  3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Roast the potatoes for 25-30 minutes, or until they are golden brown and tender, flipping halfway through.
  2. Once done, remove from the oven and sprinkle the crumbled feta cheese over the hot potatoes. Return to the oven for an additional 5 minutes, allowing the cheese to soften slightly.
  3. Remove from the oven, garnish with fresh parsley and lemon zest, and serve warm.

Notes

These roasted potatoes pair well with grilled meats or a refreshing salad. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
