  • 1/4 cup Lemon juice Freshly squeezed preferred
  • 3 tablespoons Dijon mustard
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
For the Bowl
  • 1 cup Orzo pasta
  • 1 cup Feta cheese Crumbled or creamy
  • 2 tablespoons Olive oil For whipping feta and cooking chicken
  • 2 cups Fresh vegetables (e.g., bell peppers, cucumbers, tomatoes) Chopped
  • to taste Fresh herbs (e.g., parsley, dill) For garnish

Method
 

Marination
  1. Marinate chicken breasts in lemon juice, Dijon mustard, salt, and pepper for at least 30 minutes.
Cooking
  1. Cook the orzo pasta according to package instructions and set aside.
  2. In a skillet, heat olive oil over medium heat and cook the marinated chicken until fully cooked.
  3. Remove chicken from skillet, let it rest, then slice it.
Whipping Feta
  1. In a bowl, whip feta cheese with olive oil until creamy.
Assembly
  1. Assemble the bowls by placing cooked orzo at the base, adding fresh vegetables, sliced chicken on top, and a dollop of whipped feta.
  2. Garnish with fresh herbs and serve.

Notes

For marination, if you have time, let the chicken sit for a few hours or overnight for even better flavor. This bowl can be served warm or cold, making it a versatile option for any meal setting.
